Ash e-Anar (Pomegranate Soup with Lamb Shanks)

Ingredients:

  • 1     c. lentils
  • 1/2  c. rice
  • 1     bunch fresh parsley chopped or 1 c. dried crushed parsley
  • 1     6 oz packet of frozen chopped spinach or 1/2 pound fresh chopped spinach
  • 1     T. crushed dried mint leaves
  • 1     T. salt
  • 1     tsp.crushed black pepper
  • 2     T. sugar
  • 1     tsp. tumeric powder
  • 4      lamb shanks
  • 3-4  c. water
  • 32 ozs. pomegranate juice or 3/4 cups pomegranate syrup

Instructions:

Brown lamb shanks in a large skillet with a few T. extra virgin olive oil and place in crock pot.

Add all ingredients except pomegranate. Cook on low for 6-7 hours. Add pomegranate and let simmer for thirty minutes more.

Serves 6-8.

  2. It was quite good, and it was a generous two meals for us. (We still have leftovers for lunch tomorrow, but I may skip it - three days in a row of the same thing may be a bit much.) It was also pretty easy.

  4. I tried something like this recipe at an Iranian restaurant in Japan. The taste was a surprise to me - lets just say I didn't expect it. Would love to try making it myself so thanks for sharing the recipe

  5. Please do let me know how it turns out, and what you think of it. My husband thought it turned out fine. I thought it was kind of cheeky of me to take three recipes, combine them, throw everything into a crock pot (that must be some sort of sacrilege!) and claim it's "Ash e-Anar," when I've never tried the dish at all and have nothing to compare it to! LOL!

    Oh well. I thought it was quite good, and certainly beats standing over a hot stove for two hours. (My husband's cousin wrote something like, "The important thing is to stir it constantly." Eeeeek! I remember, when I was first married, my youngest brother in law lived with us for a few months. He was still in his teens, and I thought his mother would kill me if I served him anything that came out of a can. I finally said this out loud to him, and he gave me the most puzzled grin. "Why? She does it all the time." All righty, then. She, herself, confessed to buying packaged phyllo dough - I just thank goodness I asked before attempting THAT.

  6. Great! Thanks for letting me know, and do tell me what you think after you have a chance to try one of my recipes. I'd meant to add a little fresh basil to the egg dish, by the way. It was good without, but I think it would have been even tastier with. I dropped by your blog, as well, and will definitely be back. Anyone who writes a eulogy to a dryer is pretty cool in my book.
